Einkorn Cornbread

Servings: 8 slices

Ingredients
  

  • 1 1/2 cup cornmeal (organic non-gmo)
  • 1/2 cup einkorn flour or any flour of your choice
  • 1/2 t salt
  • 3 t baking powder
  • 1 to 1 1/2 cup milk or buttermilk
  • 1 egg
  • 1/3 cup melted butter
  • 1/4 cup olive oil

Method
 

  1. Mix dry ingredients. Incorporate with a fork
  2. Add milk, egg, and melted *butter. mix well
  3. Pour 1/4 cup olive oil in iron skillet. Heat skillet on high. Pour batter in when hot.
  4. Bake 425°F for 18-20 min

Notes

Note: This was my recipe for regular flour before we switched to einkorn flour.  You may need to adjust the liquid if you are using regular flour. 
*If you are using salted butter you may want to omit the salt
