Tried and True Einkorn Sugar Cookies for a Perfect Baked Good

These sugar cookies are a tried and true recipe. Has worked for all flours. And I think I tried spelt flour years ago. By far the best flour is einkorn….a flavor one can’t resist with a healthy sugar you need in your pantry.
What is einkorn flour?
You may wonder.….why do I bake with einkorn and what is einkorn?
It’s an ancient grain and Jovial Foods has an article about this flour. Einkorn is easier to digest and has not been modified. For more recipes read about my other einkorn recipes.
A warm sugar cookie is a treat everyone loves. And these einkorn cookies won’t make it off the pan and into a cookie jar anyway.
My kids grab them barely out of the oven!
Healthy Sugar
Have you heard of sucanat? “Sucre de canne naturel” but the brand name is Sucanat (SUgar CAne NATurally). Sucanat retains the molasses, vitamins, and minerals. Here’s an article about sucanat.
Sucanat is healthier for you. Refined white sugar is stripped of all the minerals. We also use raw local honey, and maple syrup for a lot of baking, but a cookie is a little trickier when adding more liquid and the desired sweetness.
Making these sugar cookies with sucanat will give you a deep, rich flavor. We also use organic cane sugar which is a little lighter than sucanat.
Check your local health food stores or online for einkorn flour and sucanat. I purchase mine in bulk. If you want to grind your flour, purchase a grain mill.
After you’ve made these Einkorn sugar cookies for everyone, when they are tucked in bed, you can bake your own batch without your hands in the cookie jar—if the cookie batter actually gets in the oven!

Ingredients
Method
- Soften butter and add sugar and vanilla
- Mix in salt, baking powder. incorporate well.
- Add egg
- Add flour
- Mix well and place cookie dough on pan
- Bake 375°F for 8-10 min
Notes
- 2 Cups powdered sugar *
- 1 c butter
- 1 t. vanilla
- 1/8 c milk or less
- food coloring
- Cream together softened butter and powdered sugar
- Add milk to the desired consistency
- Add vanilla
- Add food coloring to the desired color
- 1 cup sugar
- 1T arrowroot or cornstarch

I finally opened up my large granular sucanat and baked these cookies! I assumed the amount of dough for each cookie was a heaping tablespoon. Baked them for 15 min. in gas oven, until bottoms were golden brown. It made 3 dozen.
This was my 1st time using sucanat and wondered whether I ought to grind the sugar to a finer consistency. But decided to just go with it. The raw dough had brown speckles.
Once baked, the cookies had a smooth texture, light maple flavor and not too sweet. I am thrilled! My family loves them! Thanks for the recipe, Lori 😊

A question. The sucanat made a poka dot effect even after baking. Ought I grind the sucanat next time?
That’s great and you’re welcome! You can grind it to be finer if you’d like. Different brands are finer if you prefer. We bake about 9-10 minutes. I like them soft with a light crunch. I love my gas oven and the convection bake option. The flavor of sucanat is so good!
Hi, Thank you for this recipe!! I just moved and don’t have my measuring tools so I winged it. They turned out very tasty! My question to you is. Do I need to use 2 eggs? It made one tray of 2 TBLS cookies. Definitely will make again. Babies loved it but not like the Publix or market sugar cookies.

I have typically seen in recipes using einkorn flour to measure using grams rather than by cups. If you have a scale, would you mind measuring the flour for this recipe as you usually do, then weigh and share the weight?
