It’s cold outside….a pot of chili is on the stove, and a buttery slice of cornbread will add a nice touch to this meal. Make this einkorn cornbread in minutes and this will be a top family favorite!

Einkorn Cornbread

Bake an organic cornbread recipe for a healthy choice and avoid GMO foods. I’ve used this recipe for years, and have tried many different flours, so use your choice of flour that’s best for you. Use organic cornmeal to ensure it’s digestible since GMO foods can be hard to digest.

Can I use einkorn flour for other baked goods?

Yes! We like einkorn flour, and changing my recipes has worked really well with a few adjustments.

Einkorn Cornbread

Servings: 8 slices
Cuisine: American

Ingredients
  

  • 1 1/2 cup cornmeal (organic non-gmo)
  • 1/2 cup einkorn flour or any flour of your choice
  • 1/2 t salt
  • 3 t baking powder
  • 1 to 1 1/2 cup milk or buttermilk
  • 1 egg
  • 1/3 cup melted butter
  • 1/4 cup olive oil

Method
 

  1. Mix dry ingredients. Incorporate with a fork
  2. Add milk, egg, and melted *butter. mix well
  3. Pour 1/4 cup olive oil in iron skillet. Heat skillet on high. Pour batter in when hot.
  4. Bake 425°F for 18-20 min

Notes

Note: This was my recipe for regular flour before we switched to einkorn flour.  You may need to adjust the liquid if you are using regular flour. 
*If you are using salted butter you may want to omit the salt
